The situation
The evidence is fragmented by format rather than by meaning: terms in PDFs, tolerances in drawings, commitments in mail, exceptions in a ticketing system.
Much of it is commercially confidential to counterparties who did not consent to it being processed by a third-party model, which rules out the obvious tools.

Counterparty confidentiality is not yours to waive
Supplier pricing and specifications are usually confidential to the supplier. Processing them through a hosted model may breach a term you agreed to, whatever your own risk appetite.
